Here's a good little shareware hex editor.
I use it all the time.
It even shows you the entire ASCII character set when you press CTRL-ALT. And because it is a DOS program, you can get any of these characters (especially in the extended set) by holding down the ALT button and typing in it's number value in with the numeric keypad.
Here's a good trick, if you save a file with an extended ASCII character (anything with a value greater than 126) in it's file name, Window just can't see that character. Through windows you can see that there's a file there, but you can't view it, move it or even delete it! :)
Dexter is a shareware program with a nag message after 30 days. The date is stored in dexter.cfg, so if you don't change the default settings, dexter.cfg won't be created, and there will be no nag message. If you do get the nag message, just delete dexter.cfg.
